Cinna-Maple Crunch Magic Muffins with Granola

Makes: 12 Muffins 

 

Ingredients

  • 1 1/3 cups gluten-free flour 
  • 1/2 cup granulated sugar 
  • 2 teaspoons baking powder 
  • 1 teaspoon cinnamon 
  • 1/2 teaspoon salt 
  • 2 large eggs 
  • 1/4 cup milk, non-dairy if needed 
  • 1/4 cup neutral oil 
  • 1 teaspoon vanilla 
  • 2 apples, shredded, plus extra slivers for topping 

Instructions

  1. Warm Up: Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin with liners.
