Savory Cinna-Maple Splendor | Sweet Potato Recipe

What You’ll Need:

For the Sweet Potato Casserole:

  • 4 medium sweet potatoes (roughly 2.5 lbs), scrubbed clean
  • 1 cup full-fat coconut milk
  • 2 tablespoons melted butter
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1 teaspoon chopped fresh sage
  • 1 teaspoon chopped fresh rosemary
  • 1 1/2 teaspoons kosher salt

For the Granola Crumble Topping:

  • 1 1/2 cups Uncle Crumbles Cinna-Maple Crunch granola
  • 1/3 cup roughly chopped pecans
  • 1 tablespoon chopped fresh sage
  • 1 tablespoon chopped fresh rosemary
  • A light drizzle of olive oil (for cohesion)

Instructions:

  1. Preheat the oven to 400°F. Place your sweet potatoes on a baking sheet and poke them liberally with a fork. Roast for 1 hour, or until entirely tender.
  2. Let the sweet potatoes cool, then halve and scoop the flesh into a food processor.
  3. Reduce oven temperature to 350°F.
  4. To the sweet potato, add coconut milk, melted butter, eggs, garlic powder, nutmeg, ginger, cinnamon, sage, rosemary, and salt. Puree until smooth and royal in hue.
  5. Pour this mixture into a 1.5-quart baking dish, smoothing it with a spatula like the surface of a custardy lake.
  6. In a mixing bowl, combine Cinna-Maple Crunch granola, chopped pecans, and the fresh herbs. Drizzle lightly with olive oil and stir gently until the granola just begins to clump.
  7. Scatter the crumble across the sweet potato base like fallen autumn leaves.
  8. Bake at 350°F for 35–40 minutes, or until the granola is golden and the casserole gently puffed. Serve immediately for maximum crisp-crumble impact.
