The Sugarplum Glacier Delight: A Granola-Powered Sundae

A cozy evening with lights a’twinkle calls for a dessert as magical as a moonbeam. Enter the Sugarplum Glacier Delight, a showstopping ice cream sundae layered with fresh sugar plums and our irresistibly crunchy Sugar Cookie granola, served in a gleaming glass goblet. It’s an all-natural, gluten-free dessert without a hint of artificial anything.

 

Homemade Sugar Plums 🍇✨

 

Ingredients (makes ~12 plums):

  • ½ cup prunes, finely chopped
  • ¼ cup dried apricots, finely chopped
  • ¼ cup dried cranberries, finely chopped
  • ½ cup toasted unsalted almonds, chopped
  • ¼ cup toasted unsalted pecans, chopped
  • 2 tbsp cherry jam or preserves
  • ¾ tsp orange zest
  • ¼ tsp cinnamon
  • ⅛ tsp nutmeg
  • ⅛ tsp ground cloves
  • ⅛ tsp cardamom
  • Pinch of salt
  • ½ cup coarse sugar for coating (for that sparkle!)

 

Instructions:

  1. Preheat your oven to 350°F and toast the almonds and pecans for 6–7 minutes until fragrant. Let cool.
  2. Chop all dried fruits finely. In a food processor, pulse fruits and nuts until finely chopped but still textured.
  3. Add the cherry jam, orange zest, spices, and salt. Pulse until the mixture clumps together.
  4. Scoop ~1 tbsp portions and roll into small ovals. Optional: make a tiny indentation with a toothpick for a classic sugarplum look.
  5. Roll each sugar plum in coarse sugar until sparkling. Store in the fridge for up to a month or freeze for longer.

 

Assembling the Glacier Delight 🍧

You’ll need:

  • Vanilla or almond milk ice cream (or your favorite natural frozen dessert)

  • Homemade sugar plums
  • Fresh berries or a drizzle of honey (optional)

Steps:
